Bear’s Garlic (Allium ursinum) is a bright green perennial of the Amaryllis family with tiny, lacy, white flowers. Native to temperate climates all across Europe and Asia, Bear’s Garlic is one of the first plants to break ground in the springtime, acting as a little green beacon of nutrition and energy for the bears as they wake from their long winter’s nap.
Bear’s Garlic is also known as Wild or Wood garlic, Ramson’s herb or Bear’s leek. It’s a very close relative of its more well-known culinary cousin, but even higher in nutritional value and has a slightly milder flavor profile. Dried Bear’s Garlic can be infused or decocted for a wonderfully revitalizing tea.
